Marty from A Stroll Thru Life is cohosting a Holiday Baking Party today, and I couldn't resist joining along. I think it was this photo that got me.
Here goes...
I am sharing a recipe for Whole Wheat Apricot Bread that I got from my mom. She was (and still is) a June Cleaver mom. Things like this were waiting for us when we got home from school.
Ingredients:
3/4 cup water
1/2 cup dried apricots, snipped
1/2 cup raisins
1 1/2 cup whole wheat flour
1/2 cup packed brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 lightly beaten eggs
1/4 cup butter or margarine melted
1 tsp. vanilla
1/2 cup chopped walnuts
In a medium saucepan, combine water, apricots, and raisins. Bring to boiling; remove from heat. Cool.
Do not drain.
In a large mixing bowl, stir together flour, sugars, baking powder, baking soda, and salt.
Stir in the apricot mixture, eggs, butter, and vanilla.
Fold in walnuts.
Turn into a greased 9x3x5 inch loaf pan. (This is what the recipe calls for, but it seems too big.)
Bake in a 350 degree oven for 40 to 45 minutes. (I used a convection oven at 325 for 35 min.)
Cool in pan on wire rack for 10 minutes; remove from pan. Cool.
Yum!
